Day 6: Snow Peas, Mushrooms & Bell Peppers Stir Fry (30 days of Vegan Repices)

Stir fry is pretty easy and quick to make and I love it! It's really versatile since you can add any vegetable that you desire, creating your very own version and variety. This one is my favorite combination; snow peas, mushrooms and colorful bell peppers. Take a look:




Recipe by Sweet Caroline

Ingredients:
1 lb. snow peas
1 cup baby bella mushrooms, sliced
1 yellow onion, sliced
1/2 green bell pepper, sliced
1/2 yellow bell pepper, sliced
1/2 red bell pepper, sliced
1/2 orange bell pepper, sliced
2 cloves garlic, minced
2 tablespoons vegetable oil
1 tablespoon soy sauce
Salt and black pepper

Directions:
In a large skillet, heat oil over medium/high heat. Add garlic and sauté until golden in color. Add onion, bell peppers, snow peas and mushrooms, sauté until it softens a little. Pour soy sauce and season with salt and black pepper. Remove from heat and serve immediately with white rice. Enjoy!
