Day 28: Portobello Mushroom & Kale Farofa (30 Days of Vegan Recipes)/Farofa de Cogumelos Portobello & Couve (Desafio: 30 Dias de Receitas Veganas)

Farofa is a very typical side dish in Brazil, made from toasted manioc flour and it's usually served with "feijoada", a type of bean stew but with lots of meat. Many brazilians like to eat farofa with everyday rice and beans, like I do. While many have their own version and variation, I thought it would be nice to make a vegan version. Since mushrooms and kale combine very well with each other, I though it would combine extremely well with the yellow corn flour, and it did! I also have a farofa version which I make with carrots and raisins, it's delish, maybe I'll share it some other day. Take a look:

(Eu pensei que seria legal fazer uma versão vegana com farofa. Como os cogumelos e couve combinam muito bem um com o outro, eu pensei que iria combinar muito bem com a farinha de milho amarelo, e ficou uma maravilha! Eu também tenho uma versão de farofa que eu faço com cenoura e passas, que é ótima, talvez eu vou compartilhá-la outro dia. Dê uma olhada:)



Recipe by Sweet Caroline

Ingredients:
2 tablespoons olive oil
1/2 yellow onion, sliced
2 portobello mushrooms, sliced
1 bunch of kale, chopped
2 tablespoons soy sauce
1 cup yellow corn flour or toasted manioc flour
Salt and black pepper

Directions:
In a large skillet or pan, heat olive oil over medium/high heat. Add onion and sauté until translucent. Add mushrooms and sauté until they begin to soften. Add kale and sauté until it wilts. Pour soy sauce and mix to combine. Add the yellow corn flour, stirring to combine all the ingredients. Season with salt and black pepper. Serve hot or at room temperature. Serve with white rice and cooked beans. Enjoy!


Receita por Sweet Caroline 

Ingredientes: 
2 colheres de sopa de azeite de oliva 
1/2 cebola, picada
2 cogumelos Portobello, cortado em fatias 
1 maço de couve, picada 
2 colheres de sopa de molho de soja 
1 xícara de farinha de milho amarela ou farinha de mandioca torrada 
Sal e pimenta preta

Modo de preparo:
Em uma frigideira ou panel grande, aqueça o azeite em fogo médio/alto. Adicione a cebola e refogue até ficar transparente. Adicione os cogumelos e refogue até que comecem a amolecer. Adicione a couve e refogue até que ela murche um pouco. Despeje o molho de soja e misture. Adicione a farinha de milho amarela, mexendo. Tempere com sal e pimenta preta. Servir quente ou à temperatura ambiente. Sirva com arroz branco e feijão cozido. Aproveite!
