Day 27: Split Pea Soup with Cumin & Cilantro (30 Days of Vegan Recipes)

The temperature where we live is dropping quite a bit, I guess the signs of the Fall season are getting stronger. To warm the body and belly, there's nothing better than soup. I made some split pea soup with cumin and cilantro a couple days ago and it was the perfect comfort food with the cold weather. Take a look:




Recipe by Sweet Caroline

Ingredients:
1 lb. bag dried split pea, rinsed
2 tablespoons olive oil
2 cloves garlic, minced
1 yellow onion, diced
1/2 teaspoon ground cumin
Handful of chopped cilantro
Salt and black pepper

Directions:
In a medium pot over high heat; add the dried split pea and enough cold water to cover the split peas. Bring to a boil, reduce heat and let simmer, stirring occasionally. If all the water evaporates before the peas are tender, just keep adding water to the pot until the peas are tender (it all takes about 45 - 60 minutes, depending). Remove from heat, and pour the peas to a bowl. Return the pot to the heat, add the olive oil. Add the minced garlic and onion, cook until onion is translucent. Pour the peas to the pot, and stir to combine. Add ground cumin, season with salt and pepper. Add chopped cilantro. Serve hot and enjoy!


* Tip *: I like my soup with a little texture but you can puree the peas using a blender before returning them to the pot. I think it's great either way, but it's your choice!
