Day 25: Tofu Scramble with Tofurky Sausage & Spinach (30 Days of Vegan Recipes)

During this vegan challenge, one of the most difficult things I had to give up was the egg! I love eating eggs in the morning, even though I'm doing incredibly well without it, I still crave it. To satisfy my craving, I thought it would be fun to recreate scrambled eggs but without the egg, of course. This tofu scramble is delish and hits all the right taste buds, in my humble opinion, at least. There are plenty of spices and I've added some tofurky italian sausage and baby spinach for more flavor. Take a look:



Recipe by Sweet Caroline

Ingredients:
1 (16 oz.) package firm tofu
1 tablespoon olive oil
1/4 teaspoon red pepper flakes
1 small yellow onion, chopped
1/4 teaspoon ground cumin
1/4 teaspoon turmeric
1/4 teaspoon paprika
1 tofurky italian sausage, diced
1 cup baby spinach
Salt and black pepper

Directions:
Place tofu in a plate lined with paper towel to absorb liquid. In a large skillet, heat olive oil over medium high heat. Add red pepper flakes and onion, sauté until onion is translucent. Using your hands or a fork, crumble the tofu and add to the skillet. Add spices and mix well to combine. Add diced sausage and baby spinach, keep stirring until spinach wilts. Season with salt and black pepper. Serve hot and enjoy!

* Tip *: add some vegan shredded cheese over the top for more flavor.
