Day 24: Couscous with Tomato & Herbs (30 Days of Vegan Recipes)

I love making couscous based on the fact that's so easy and quick to make, it takes about five minutes to make. It's a perfect meal to make if you're in a hurry and don't to make a fuss, take a look:



Recipe by Sweet Caroline

Ingredients:
1 cup water
3/4 cup couscous
20 grape tomatoes, cut in half
2 tablespoons basil, cut into ribbons
2 tablespoons parsley, chopped
2 tablespoons green onion, chopped
1 tablespoon olive oil
Salt and black pepper

Directions:
In a small sauce pan, bring water to a boil. Stir in couscous, cover and remove from heat. Let it stand for 5 minutes. Fluff couscous with a fork, add tomatoes and herbs, drizzle olive oil. Season with salt and black pepper. Serve at room temperature or chilled. Enjoy!
