One of my favorite combinations; tomato, hearts of palm and basil! If you like you can also add thinly sliced zucchini or yellow squash or cucumbers. Take a look:
4 roma tomatoes, cut in half and sliced
1 (14. oz) can hearts of palm, drained and sliced
1/2 yellow onion, diced
3 tablespoons basil, thinly sliced
2 tablespoons olive oil
Salt and black pepper
In a bowl, combine tomatoes, hearts of palm and onion. Drizzle olive oil, season with salt and black pepper, sprinkle sliced basil. Toss really well. Serve and enjoy!
