Day 19: Salad with Hearts of Palm & Craisins (30 Days of Vegan Recipes)

Really simple salad but big on flavor! The heartiness from the hearts of palm, the spiciness from the arugula leaves and the sweetness from the craisins compliment each other extremely well. Take a look:



Recipe by Sweet Caroline

Ingredients:
3 cups baby spinach
1 cup baby arugula
1/2 small yellow onion, diced
1 (14 oz.) can of hearts of palm, drained and sliced
1/3 cup craisins
Store bought raspberry vinaigrette dressing

Directions:
In a bowl or serving dish, arrange spinach and arugula. In layers, add onion, sliced hearts of palm and craisins. Right before serving, toss salad with raspberry vinaigrette. Enjoy!
