Day 18: Kale with Roasted Lemon Pepper Potatoes (30 Days of Vegan Recipes)

Today's dish takes just 4 ingredients to make! Pretty easy, huh? Roasted lemon pepper potatoes combine really well with seared and crispy kale leaves, making this dish extremely scrumptious. Take a look:



Recipe by Sweet Caroline

Ingredients:
3 tablespoons of olive oil
1 lb. red potatoes, peeled and diced
2 tablespoons lemon pepper seasoning
1 bunch kale, ribs removed and chopped

Directions:
Pre heat oven to 400F degrees. In a bowl, combine potatoes, 2 tablespoons olive oil and lemon pepper seasoning, toss to combine really well. Place potatoes in a baking sheet sprayed with cooking spray. Bake potatoes until crispy and golden in color about 15-20 minutes. In a large skillet, heat remaining olive oil, add kale, cook until it gets seared but not wilted. Transfer kale to a serving dish and arrange roasted potatoes on top. Serve and enjoy!
