Day 14: Veggie Fajitas (30 Days of Vegan Recipes)

Yesterday, I had a wonderful dinner at our favorite mexican restaurant and I had a delicious and spicy veggie fajitas. It was so delicious that for today's lunch I tried to replicate the meal and it came out really well and very tasty too. Take a look:




Recipe by Sweet Caroline

Ingredients (serves 2-3):
1 tablespoon olive oil
1/2 yellow onion, sliced
1/2 green bell pepper, sliced
1/2 red bell pepper, sliced
1/2 yellow bell pepper, sliced
1/2 cup baby bella mushrooms, sliced
1/2 zucchini, sliced
1 cup baby spinach
1/2 teaspoon ground cumin
1/8 teaspoon cayenne pepper
1/8 teaspoon chili powder
Salt and black pepper
Corn tortillas for serving

Directions:
In a large skillet, heat olive oil over medium/high heat. Add veggies except spinach, sauté for a couple of minutes until they're a bit soft. Add spices, season with salt and black pepper. Add spinach and sauté until wilts. Serve immediately with warm corn tortillas. Enjoy!
