Day 10: Mashed Potatoes with Cream Cheese & Chives (30 days of Vegan Recipes)

While I was grocery shopping the other day, I found a vegan cream cheese and I knew I had to try it by making mashed potatoes. These mashed potatoes are creamy, flavorful and delicious! Give them a try, take a look:



Recipe by Sweet Caroline

Ingredients:
6 large red potatoes, peeled and chopped 
2 tablespoons vegan butter (I used Earth Balance)
2 tablespoons vegan cream cheese (I used GoVeggie!)
2 tablespoons chopped chives
Salt and black pepper

Directions:
In a large pot, combine the potatoes and enough salted cold water to cover. Bring to a boil, then lower the heat and simmer until tender. Drain well and return to hot pot. Mash the hot potatoes with butter and cream cheese. Add chives, season with salt and black pepper. Serve and enjoy!
