Warm Chayote Salad

As a child I used to hate eating chayote, to me it had a weird taste. Now, as a grown-up I love eating it and it's not always easy to find but when I saw these at the supermarket the other way I knew I had to grab them and make a delicious dish with them. Take a look:


Recipe by Sweet Caroline

Ingredients:
3 chayotes, peeled and chopped
3 cloves garlic, minced
1/2 yellow onion, diced
1 tablespoon vegetable oil
1/3 cup water
Juice 1/2 lime
Handful chopped cilantro
Salt and black pepper

Directions:
In a large pan, heat oil over medium/high heat. Add the minced garlic and sauté until golden in color. Add the chopped chayote and sauté for a couple of minutes. Pour the water and cover, let it cook until chayote softens (if necessary add more water). Once chayote softens, add the diced onions and let it cook for a couple of minutes. Season with salt and black pepper. Remove from heat. Add the lime juice and chopped cilantro. Mix well to combine. Transfer to a bowl and serve. Enjoy!
