Mashed Potatoes with Leeks & Blue Cheese

This mashed potato recipe is my favorite simply because it combines all of my favorite things: potato, leeks and cheese! I love how the leeks combines so well with the tangy blue cheese, making the simple mashed potatoes just out of this world! Take a look:


Recipe by Sweet Caroline

Ingredients:
6 large red potatoes, washed and chopped with skin)
1 large leek, thinly sliced and washed
1 tablespoon olive oil
2 tablespoons butter
1/3 cup heavy cream
4 ounces crumbled blue cheese
Salt

Directions:
In a large pot, combine the potatoes and enough salted cold water to cover. Bring to a boil, then lower the heat and simmer until tender. Drain well and return to hot pot. Meanwhile, in a large skillet, heat olive oil over medium/high heat. Add the thinly sliced leek and sauté until leeks softens. Season with salt. Mash the hot potatoes with butter and heavy cream. Add the leeks and crumbled blue cheese, combine well. Season with salt. Serve and enjoy!
