Mini Vegan Banana Oatmeal Muffins

These mini muffins are vegan and delicious, they're perfect bite-size snacks to go! It's very easy to make them, give it a try. Take a look:


Recipe by Sweet Caroline

Ingredients (makes 32 mini muffins):
1 cup oats
1 cup soy milk
1 cup whole wheat flour
1/2 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
3 bananas, mashed
1 teaspoon vanilla extract

Directions:
Preheat oven to 400 degrees. In a bowl, combine oats, flour, brown sugar, baking powder and salt, set it aside. In another bowl, combine soy milk and vanilla extract. Add the mashed bananas and combine well. Add the dry ingredients and mix just until combined. Pour batter into a mini muffin pan lightly sprayed with oil. Bake for about 10-12 minutes. Serve and enjoy!
