Zucchini Salad

The days are getting hotter and hotter everyday, creating meals in such hot weather can be a little hassle sometimes. That's why I'm sharing this salad because it's perfect to these hot days, keeps the stomach satisfied and it's also refreshing! Take a look:



Recipe by Sweet Caroline

Ingredients:
2 zucchinis, sliced
2 small carrots, peeled and sliced
6 radishes, thinly sliced
2 tablespoons olive oil
Juice of 1 lime
Handful of chopped parsley and scallions
Salt and black pepper

Directions:
In a small dish, whisk together olive oil, lime and herbs, season with salt and pepper. In a large bowl, add the sliced zucchini, carrot and radish, pour dressing and toss to combine. Refrigerate for half hour. Serve and enjoy!

Yum! I love simple salads in the summer, it is what we live off of - that and grilling everything :-) Looks delicious!

I'm glad to see this, because we always get zucchini at our CSA and it's not a veggie I have a lot of ideas for. This looks really good. My kids like it, so I'll give your recipe a try!
