Watermelon & Feta Salad with Basil

I was always a little skeptical in combining watermelon and feta cheese, it always seemed like a weird combination of flavors to me. Last week I was ready to overcome some skepticism and decided to create this salad and I'm so glad I did because I loved it! I even added my little own twist to it, switching the classic mint for basil and it came out fantastic, take a look:


Recipe by Sweet Caroline

Ingredients:
4 cups cubed seedless watermelon
3 oz. feta cheese, crumbled
2-4 leaves basil, cut into little ribbons
2 tablespoons olive oil
1 tablespoon apple cider vinegar
1 tablespoon honey
Sea salt and black pepper

Directions:
In a small dish, whisk together olive oil, vinegar and honey. Add sea salt and black pepper to your taste. In a large bowl, add the cubed watermelon, crumbled feta cheese and basil. Pour dressing and toss everything together. Serve at room temperature or cold. Enjoy!

What an interesting combination! I will have to try this. I love feta, watermelon and basil, but never would think to put them together.

I always thought it was a strange combination too, but your salad looks amazing! I guess I'll have to step out and try it!

For sure a strange combination, but I think the basil sounds so much better than the mint.
