Meatless Monday: Garlic Polenta with Sautéed Collard Greens

This dish it's what I consider comfort food and the ultimate combination! I can easily eat bowls and bowls of polenta with collard greens and never get sick of it. And I'm sure you'll love it too! Take a look:


Recipe by Sweet Caroline

For Collard Greens
Ingredients:
1 bunch collard greens (wash and dry leaves, cut into thinly ribbons)
2 cloves garlic, minced
2 tablespoons olive oil
Salt and black pepper

Directions:
Heat olive oil in a large skillet over medium/high heat. Add the garlic and sauté for about a minute. Add the collard greens and sauté for another 2 or 3 minutes until the collard greens wilts a little. Season with salt and pepper. Serve over hot polenta. Enjoy!

For Polenta
Ingredients:
1 cup fine cornmeal
3 cloves garlic, minced
1 tablespoon olive oil
3 cups water
Salt

Directions:
In medium bowl, add the cornmeal and gradually add the water while whisking everything together. In a medium pot, heat the olive oil over medium high heat. Add the minced garlic and sauté until golden in color. Add the cornmeal and water mixture into the pot. Reduce heat to medium/low. Keep whisking until it thickens. Season with salt. Serve with sautéed collard greens. Enjoy!
