Chicken with Bacon & Tomatoes

I usually make this little dish quite often during the week for my family and they loved it! It's really simple and quick, it's perfect served with white rice or polenta. Take a look:


Recipe by Sweet Caroline

Ingredients:
3 small boneless and skinless chicken breasts, chopped
5 strips smoked bacon, chopped
1/2 yellow onion, diced
2 roma tomatoes, diced
1/2 cup water or chicken stock
2 tablespoons chopped parsley and green onions
2 tablespoons poultry seasoning
1 tablespoon vegetable oil
Salt and black pepper

Directions:
Season chicken with poultry seasoning and black pepper, set it aside. In a large pan, heat vegetable oil over medium/high heat. Add bacon and let it cook until crispy. Add seasoned chicken and let it cook until no longer pink. Add diced onion and sauté until translucent. Add tomatoes and pour 1/2 cup water or chicken stock, let it cook uncovered on high until half the water evaporates. Adjust seasoning if necessary with salt and pepper. Sprinkle with parsley and green onions. Serve with white rice or pasta. Enjoy!
