Key Lime Mousse

Since I love key lime pie, I thought it would be fun to create a mousse invoking those flavors that I love so much. This recipe takes about 5 minutes to make and only 3 ingredients, pretty easy! Take a look:


Recipe by Sweet Caroline

Ingredients (serves 6):
1 can condensed milk
1 1/2 cups heavy whipping cream
Juice and zest of 2 limes

Directions:
In a bowl, combine condensed milk and lime juice, mix well and reserve. In another bowl, add the heavy whipping cream and beat using a hand electric mixer until it forms peaks. Add the condensed milk and lime mixture and half of the lime zest to the chantilly cream, mix to combine. Arrange mousse into individuals glasses and refrigerate for 30 minutes. Before serving, sprinkle the rest of lime zest to garnish. Serve and enjoy!

I really liked this and did not have any problems following the recipe and getting it to work. I did top with fresh whipped cream and a few raspberries. It is a light, simple way to end a robust meal. I made it the day before and it was even better the following day.
