Chickpea, Cucumber & Feta Salad

Another equally delicious salad for this week. I love chickpeas and I can eat it everyday, it's so yummy and filling. Take a look:


Recipe by Sweet Caroline

Ingredients:
2 cans (15.5 oz each) chickpeas, drained and rinsed
1/2 of large english cucumber, cut lengthwise and thinly sliced
1/2 yellow onion, diced
3 tablespoons feta cheese
Juice of 1 lime 
2-3 tablespoons olive oil
Handful of chopped cilantro
Black pepper

Directions:
In large bowl, combine chickpeas, cucumber, onions. Sprinkle the feta cheese and chopped cilantro. Drizzle olive oil and lime juice. Season with black pepper. Toss really well. Serve and enjoy!
