Bacon, Kale & Pepper Jack Cheese Panini

This is a killer panini and the combination of flavors are insane and delish! The crispy bacon, the pan-seared kale and melted cheese are perfection and I really believe you can't go wrong with bacon, kale and pepper Jack cheese, am I right? Take a look:


Recipe by Caroline from Sweet Caroline's Corner

Ingredients (makes one panini):
2 slices whole wheat bread or your favorite
3 slices cooked and crispy bacon
1 cup roughly chopped kale
2-3 slices pepper Jack cheese
1/2 tablespoon olive oil
Butter, room temperature

Directions:
In a small skillet, heat the olive oil over medium/high heat. Add the kale, cook them until they get seared but not wilted. Pre heat panini press. Start to assemble panini; butter on side of bread slice and turn to face down, arrange cheese slices, top with crispy bacon and add the seared kale pieces. Top with the other bread slice and butter the top. Gently place the sandwich onto panini press and let cook for about 2 minutes, it should be golden in color and cheese melted. Serve hot and enjoy!
