Peach Salsa

While we were traveling through Savannah, I noticed that a couple fruit stands by the road were selling peach salsa. I really regret not stopping and buying it. As soon as I got home I knew I had to make it just to get the idea out of my head, the results were amazing. Take a look:


Recipe by Sweet Caroline

Ingredients:
2 roma tomatoes, diced
2 peaches, peeled and diced
1/2 white onion, diced
1 jalapeño, without seeds diced
Juice of 1/2 lime
Handful of chopped cilantro (this is totally optional since either people like it or hate it)
Salt and pepper

Directions:
In a bowl; add all the ingredients, season with salt and pepper, toss really well. Refrigerate for about 20 minutes before serving. Serve with some corn or tortilla chips and enjoy!

* Tip *: This salsa is great served on top of fish, grilled chicken or pork. It's delicious either way. Give a try!

Good Eats During Vacation

There's nothing better than to eat really good food
while on vacation, I already told you about the southern comfort food 
we had while in Savannah. We were lucky enough to have
our own little kitchen in our hotel room, it was a big plus 
since the hubby and I love to cook, and we didn't have to eat out 
every single day or night, it also allowed us to save 
some extra cash too (who doesn't love that?).


One night, my hubby made tortellini with a creamy sun dried tomato sauce,
and let me tell you: it was delish! 
Do you love to cook during vacation too?

And whenever we would eat out, we always opted for seafood since it's so fresh.

I had the Tropical Mahi-Mahi Tacos: with shredded cabbage, mango salsa and 
cheddar jack cheese and the hubby had the Key West combo; grilled mahi-mahi, 
shrimp grazed in key lime honey mustard and conch fritters. Both plates were very 
delicious and affordable.

We also ate at Frenchy's South Beach Cafe, it's right by the beach and the food
is also good and affordable. I had a Sesame Tuna Salad; fresh yellow fin tuna
seared with sesame seeds served over greens with wasabi dressing and wontons
and the hubby had the South Beach Seafood Platter; combination of shrimp, 
scallops and grouper all grilled to perfection and served with extra sides too.

I don't know about you but I always associate a beautiful place with
great food and atmosphere. It always brings such a good memory!

Vacation: Our Last Day at the Beach

Vacation: Visiting Clearwater's Downtown & Marina

On our final day of our vacation, we decided to
walk around Clearwater's downtown. It's very charming,
filled with many shops, boutiques, restaurants
and coffee shops.

I loved this old post office building, it was built in the 1930's and it has beautiful tiles around the windows.

Downtown is filled many sculptures, the dolphins are spread throughout the city and 
many done by different artists.

Vacation: Our Visit to Pier 60

Pier 60 is a great place to walk around and see the
beautiful beach. There are playgrounds for the kids to 
play and enjoy, and seats if you're tired of walking. 
At sunsets, there is a daily festival featuring street vendors,
artists, crafters, performers and music. Also, there is a free
film screening every Friday and Saturday night, you just need
to bring a blanket or chair and enjoy the film on the lawn.

For movie night, they put a huge jumbo screen right here and we just lay or sit on the lawn.

The views from the pier are beautiful.

 
Ian kept throwing his little monkey everywhere and we almost lost it 
during the vacation a couple of times too.

After visiting the pier, we walked around to see some shops 
and then grabbed something to eat.

 
We stopped to eat at Crabby's and the food was delicious.

Once the kids figured out that the water was nice and warm
and there was nothing to be afraid of, they pretty much spent
the day by the water, playing with each other and making sandcastles.
