Baked Chips with Spinach & Cannellini Bean Dip

Chips and dip can be healthy! That's right, I said healthy. And equally delicious too. I made this little snack to take on our little trip to the park the other day and it was perfect since it's a light and healthy version of the snack. Take a look:


Recipe by Sweet Caroline

Bake Chips
Ingredients:
6 whole wheat flour tortillas, cut into 8 wedges
2 tablespoons olive oil
Seasonings of your choice (I used onion salt and chili powder)

Directions:
Pre heat oven to 400 degrees. Place the tortilla wedges evenly in a baking sheet, drizzle olive oil on top and sprinkle seasonings. Using your hands, toss the tortilla wedges really well, everything needs to be coated with olive oil and seasoning. Bake for 4-6 minutes or until crispy but not burnt. 

Dip
Ingredients:
4 tablespoons olive oil
2 cloves garlic, minced
2 cups spinach
1 (15 ounce) can cannellini beans, drained and rinsed
Juice and zest of one lemon
Salt and pepper

Directions:
Heat 1 tablespoon of olive oil in a large skillet over medium/high heat. Add the garlic and sauté until golden in color. Add the spinach and cook until wilted. Remove from heat and let it cool. In a blender or food processor, add the cooled spinach, cannellini beans, juice and zest of one lemon, 3 tablespoons olive oil, salt and pepper. Blend until smooth. Serve with baked chips.

As I promised here's another great, easy and super quick sauce to serve with fish or chicken. Take a look:


Recipe by Sweet Caroline

Ingredients:
1/3 white wine
1/2 heavy cream
1 1/2 tablespoons salted butter
Juice of a lemon
1 tablespoon chopped parsley

Directions:
In a saucepan over low/medium heat, simmer the wine until is reduced by half. Pour the heavy cream and let it simmer until it thickens a little. Add the butter, lemon juice and parsley, stir until butter melts completely and sauce is smooth. Serve over cooked fish or chicken. Enjoy!

I love avocados; it can be in salads, sandwiches, appetizers or even in smoothies. I love avocado smoothies, they're delicious and my favorite. If you never have one before, you don't know what you are missing, you have to try it!


Recipe by Sweet Caroline

Ingredients:
1/2 medium avocado
1/2 cup strawberries, chopped
1 cup milk
1 tablespoon sugar or honey
3-4 ice cubes

Directions:
Put everything into a blender, and blend until completely smooth. Serve and enjoy!

We love to eat a lot of fish or chicken during the Summer season. Trying to come upon with different recipes for the same dish can sometimes become boring, that's why I love to prepare fish or chicken the same way (either baked, grilled or pan-seared) and add a different simple sauce - which is much easier to do.

That's why I'm sharing this sauce today, perfect for either one. The fish was seasoned with salt and pepper and baked until flaky. It's the sauce that gives life to the dish.

Recipe by Sweet Caroline

Ingredients:
1 clove garlic, minced
2 tablespoons olive oil
1/4 cup white wine
1/2 cup heavy cream
2 tablespoons dijon mustard
1 tablespoon fresh thyme, chopped

Directions:
In a saucepan, heat the olive oil over medium/high heat, add the minced garlic. Sauté until golden in color. Pour the wine and stir until is reduced by half. Add the cream, mustard and thyme. Let it cook, stirring constantly until thickened. Serve over cooked fish or chicken. Enjoy!

Simple Cheesecake with Blackberry Sauce

Here's something delicious and sweet to start the week, may it be as sweet as this cheesecake! Take a look:


Recipe by Sweet Caroline

Ingredients:
Cheesecake
2 (8 oz) cream cheese, softened
2 eggs
2/3 cup sugar
1 teaspoon vanilla extract
1 ready graham cracker pie crust

Sauce
6 oz. blackberries
4 tablespoons sugar
1 teaspoon cornstarch
Juice and zest of a lemon

Directions:
Pre heat oven to 350 degrees. Using a mixer, beat the cream cheese, eggs, sugar and vanilla extract together at a low/medium speed until completely smooth. Bake for 30 minutes. Let it cool completely and refrigerate. Meanwhile, in a saucepan oven medium/high heat, add the blackberries, sugar, cornstarch, juice and zest of a lemon. Stirring constantly until the blackberries break down a little (or smash the blackberries a little with the back of a wooden spoon) and it creates a slightly thick sauce. Remove from heat and reserve. Once the cheesecake is cold and ready to serve, spoon the blackberry sauce all over the cheesecake. Serve and enjoy!

An Afternoon At NYC...

We spent the day yesterday at NYC since my husband had some pending issues to resolve but by the afternoon he was done with everything and we had an afternoon to just walk and enjoy the day. We walked a lot and I mean a lot! 

We did plenty of sightseeing even though we've seen the same places before a bunch of times but we don't mind since we both love the city so much. First, we had lunch and then we were off exploring the city. We stopped by the Grand Station and by the way it has a great market with incredible produce (I bought a delicious french macaron there), saw the Chrysler building, walked all the way to Central Park and 5th Ave., also stopped by the Rockefeller Center, saw the Atlas Statue, walked by the Public Library and Bryant Park. Like I said it before we walked a lot. 

And here's a few photos of our little afternoon trip, I wish I had more but through the day my camera battery died and so did our phones batteries. Pretty bummer, right?

at the Grand Central Market. It was huge, the size of my palm!

Green Juice: Spinach, Pineapple & Orange Juice

I often start my morning with a green juice, it's not only super healthy but totally tasty. This is by far the best combination of flavors and you can't even taste the spinach since the sweetness of the pineapple shines through. Take a look:

Ingredients:
1 cup of fresh diced pineapple 
1 cup of spinach
1 cup of orange juice

Directions:
Put everything into the blender, blend until completely smooth.

Tomato Baked with Cheese

I love tomatoes and I love cheese. Let me say it again. I love, love, love, really love cheese. Any kind really, get the idea? I have never met a cheese that I didn't love and that's a big fact! This dish is delicious, cheesy, gooey, melt in your mouth, full of flavor and kind of awesome. Really awesome. You should really give a try, take a look:


Recipe adapted from At Elizabeth David's Table Cookbook

Ingredients:
5 medium sized tomatoes
2 cups Monterey Jack Cheese
1/2 teaspoon Dijon mustard
1/4 cup white wine
1/4 cup heavy cream
1 clove garlic, minced
Salt and black pepper
Chopped basil leaves for garnish (optional)

Directions:
Cut off the tops of the tomatoes, scoop out the flesh, sprinkle them with salt, turn them upside down and leave them to drain. In a double boiler, melt the cheese with black pepper, dijon mustard, minced garlic, white wine and heavy cream. Once melted, fill the tomatoes with the mixture, bake at 375 degrees for 10 minutes and finish under the broiler. Remove from oven and sprinkle with chopped basil leaves. Serve and enjoy!

Our 4th of July was very relaxing and fun! 
We spent the day at a State Park with
family and friends from our church.
The kids loved being outdoor and running around, 
the weather was very hot, the BBQ and food were delicious.
It was a perfect holiday!

4th of July Vanilla Pudding Popsicles

Recipe by Sweet Caroline

Ingredients (makes 8 small popsicles):
2 (1.34 oz each) boxes french vanilla instant pudding
4 cups milk
Red and Blue food coloring

Directions:
In a bowl, add vanilla pudding mix with the milk. Beat with an electric mixer at lowest speed until well blended and thickened, about 2 minutes. Divide the mixture into three bowls, add the red to one and blue to the other. Pour the red pudding mix into popsicle molds, then the white pudding mix and finished with the blue. Freeze until firm. Enjoy!

The Little Things That Make My Kids Happy...

The little things in life can make a big impact,
it can make us happy. Well, in this case,
