A Sick Day & Cupcakes

Sophia woke up feeling a little sick yesterday morning, in fact, she kept me awake for a few hours the nigh before. She had a fever, was crying and feeling tired and grumpy, I think it's the cold symptoms. To make her feel a little better, I asked if she wanted to make some cupcakes with me because I know how much she loves to bake and of course, her love for cupcakes too.

She had fun mixing the cupcake batter, lining the cupcake pan with paper baking cups, licking the chocolate frosting off her fingers and putting the sprinkles on top of everything, and I mean everything, you should have seen my kitchen countertops afterwards. But, it was all fun and very much worth it after seeing how happy she was, and for a few couple hours she forget she was even sick.

Barley & Bean Salad

This salad has become one of my favorites. It's super healthy, good for the body and filled with great protein.

The ingredient that makes the difference is definetely the lemon juice, adds great flavor to the dish. Also, don't be afraid of switching some of the ingredients, you can try quinoa instead of barley and add your favorite bean instead of red kidney beans.

Recipe by Sweet Caroline
Ingredients:
2 cups cooked and cooled barley (3/4 raw)
1 can (15.5 oz) red kidney beans, rinsed
1/2 cup spinach, thinly sliced
1/2 white onion, diced
1/4 cup lemon juice
3/4 cup olive oil
salt and pepper

Directions:
1. In a large bowl, combine the barley, kidney beans, spinach and onion.
2. In a small bowl, whisk together the lemon juice and olive oil. Season with salt and pepper.
3. Pour the dressing over the salad and toss really well. Serve and enjoy.

Chocolate Chip Muffins

I love chocolate chip cookies and I also love muffins, so I thought it would a great idea to just combine the two and the result was perfect! Take a look:

Recipe by Sweet Caroline

Ingredients (makes 12):
2 cups flour
1/3 cup brown sugar
1/3 cup white sugar
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup milk
1/2 cup vegetable oil
2 eggs
1 teaspoon vanilla extract
1/2 cup semi-sweet chocolate chips

Directions:
Preheat oven to 400 degrees. Line a muffin pan with baking cups. In a bowl, add flour, white sugar, baking powder and salt, mix everything well. In a stand mixer (or a hand electric mixer), beat together the eggs, brown sugar, milk, oil and vanilla extract in lower speed until well incorporated. Add the dry ingredients and beat at high speed. Add the chocolate chips and beat once again until fully incorporated to the batter. Fill cups 2/3 full. Bake for 20 minutes or until toothpick inserted in the center comes out clean. Let it cool completely before removing from pan. Serve and enjoy!

Christmas Recap...

We spend our Christmas Eve at home as usual. 
I spent most of the day cooking and served 
dinner later at night for our family and friends.
This year we played secret Santa again with
our family - this is becoming a tradition now, 
but the best part of the evening
goes to Sophia's reaction watching her
Portable North Pole video - this was priceless.
Sophia and Ian opened a few of their gifts 
from their grandparents and her auntie.
It was a delightful Christmas Eve. 


We spent Christmas day at my parents, 
we had lunch, kids opened the rest of their gifts and I
 built a gingerbread house with the help from Sophia.

Exactly a year ago, I was feeling little contractions
through out the day. I wasn't sure if I would 
actually go into labor or if it would be a false alarm.
It turned out that it wasn't a false alarm
and my little boy Ian simply decided that
it would be his day to come into this world.
And, what a joy!

I was feeling pretty okay through the day,
I would occasionally feel a couple contractions
during the day, I was quite fine and I was even doing 
some cleaning around the house and cooking (I guess this 
is the stage they call: nesting) but by night everything changed.
Contractions started getting stronger and we rushed to the
hospital. Surprisingly, the labor didn't take too long
and Ian arrived on January 2nd, 2012 at 11:03 p.m.
My perfect, beautiful, bundle of joy, precious gift from God.
