Quick Weeknight Dinner: Mac 'N' Cheese with Spinach

Here's my daughter's favorite meal, it has been quite a challenge feeding her since she became a little picky about her food. She loves this dish and surprisingly loves the spinach too! Take a look:



Ingredients (serves 4-6):
1 pound macaroni elbows or rotini
3 tablespoons butter
3 tablespoons flour
3 cups 1% milk or low fat milk
3 cups shredded sharp cheddar cheese
2 1/2 cups spinach, chopped
Salt

Directions:
1. Boil a pot of water for the pasta. Add pasta and salt to the boiling pot and cook pasta until al dente. Drain.
2. Meanwhile, heat a medium pot over medium/high heat. Add butter and let it melt, add flour and whisk to create a roux. Whisk in the milk, add a pinch of salt and bring to a quick boil. Add the cheese and mix it well allowing the cheese to melt altogether. Stir in the spinach and pasta, adjust seasoning if necessary. Serve hot. Enjoy!

Mini Getaway: Ocean City, Maryland

This past Saturday, the hubby and I headed to Ocean City, Maryland for a mini getaway and to celebrate his birthday. I was very fortunate that my sister, mom and dad were gracious enough to babysit the kids. It has been quite a while since the hubby and I had time just to ourselves.

We're lucky that we live just 5 hours away from Ocean City, we left very early on Saturday morning and we reached the beach around 10 a.m. The weather was great, sunny and warm with some wind. We took walks on the boardwalk, took a few looks at some shops, ate some crab cakes and enjoyed very much the scenery. Later in the day, we headed to the hotel, relaxed for a little while and spend some time at the pool. Our night was very mellow, we just had dinner and enjoyed a game of mini golf. Take a look:

A Minnie Mouse Birthday Party

Last Saturday, we celebrated Sophia's 2nd birthday with a little cookout and of course with cake. Like I said in the other post, we decided to cut back with party expenses and do something small. I was surprised how everything looked perfect for the party yet with so little money.

I decided on the Minnie Mouse themed party since Sophia loves her. I found everything I needed at Walmart, that's right - Walmart! Everything was reasonably priced compared to the other stores: the plates, cups, napkins, plastic table cover, favor bags, some decor, balloons (a bag of 72 balloons for $4.00) and a big bag of candy. The total bill came to $48, I think it was quite a bargain and I got my money's worth.

I created a background using a few pink plastic table covers that I bought at the Dollar Tree. I baked a few candies (recipe here) and we cooked a few hotdogs and hamburger served with chips and soda.
