Baked Tilapia with Sauteed Spinach



I don't know if you noticed that I've
been trying to post a new recipe
each week, I'm trying new things and
everytime something actually works I like to share.
Hopefully, I'll have new and exciting recipes
for you each week.

I'm trying to eat very healthy lately
and have been eating a lot of fish too.
This recipe is quick, easy, delicious and
good for you. I hope you enjoy it as
much as I do.

Baked Tilapia
Ingredients:
4 tilapia fillets, fresh or thawed
2 tablespoons of your favorite seasoning (I used a taco seasoning mix)
2 tablespoons olive oil

Directions:
Pre-heat the oven to 375 degrees. In a baking dish, place the tilapia fillets, sprinkle the seasoning and drizzle the olive oil on top. Bake for 10-12 or until the fish is flaky. Serve warm.


Sauteed Spinach
Ingredients:
2 cloves garlic, minced
6 cups fresh spinach
2 tablespoons olive oil
salt

Directions:
In a large skillet over medium-high heat, add the olive oil and garlic, saute for about 1 minute. Add the spinach and saute until the spinach is wilted. Remove from heat and season with salt. Serve and enjoy.

My Spring Bucket List


Spring has sprung and here
comes another bucket list for
this season. I love doing a
bucket list for each season,
whenever I do something
it makes me feel
more accomplished.
So here it is:

1. Picnic in the park.

2. Make some popsicles.

3. Make or fly a kite.

4. Plant some flowers and herbs.

5. Take a bike ride.

6. Feed the ducks.

7. Go fishing.

8. Play outside with the kids.

9. Make some popsicles.

10. Visit the parks around our city.

11. Take some family pictures.

Homemade Ice Cream

I love trying new recipes, I love when
it actually works and it's delicious too.
I stumbled upon this recipe for homemade
ice cream at Cookies & Cups,
make sure to check this fabulous site.
The recipe is super easy and you can
make into any flavor that you like,
I added strawberry preserves into mine.

Ingredients:
2 cups heavy cream, very cold
1 (14 oz) can sweetened condensed milk
* optional ~ 2 teaspoons vanilla extract
* additional ~ 4 tablespoons strawberry preserves

Directions:
- In your stand mixer (a hand mixer does the trick too) with whisk attachment on high speed beat your cream until it becomes stiff, approx 1 minute 30 seconds.
- Fold in your sweetened condensed milk.
- If you are adding in extras, do that now.
- Transfer to a container with a lid and freeze for 6 hours.

*tips*:
- don't beat the heavy cream for too long, otherwise you'll end up with butter.
- I found this recipe a little too sweet, next time I'll try the sugar free condensed milk.
- Remember this recipe is for a vanilla ice cream, but you can make it to any flavor that you like, just like I did.

Veggie Frittata


It's been a while since I shared a recipe here,
I thought it was time again to share something
delicious with you.
As always, it's quite simple and easy
to make.

Ingredients:
1 small white onion, diced
1/2 bell pepper, diced
2 plum tomatoes, diced
1 cup broccoli, chopped
1/2 cup white mushrooms, sliced
8 eggs
1/4 cup milk
1 1/2 tablespoons of bisquick
salt and pepper
1/2 cup finely shredded Colby and Monterrey jack cheese

Directions:
Pre-heat the oven to 425 degrees. In a large bowl, combine the veggies and eggs, beat together. Add the milk and bisquick, beat again. Season with salt and pepper. Pour mixture into a 8x11 buttered baking dish and cover with aluminum foil. Bake for 30 minutes until the eggs are set. Remove the foil and sprinkle the top with cheese, bake for an additional 15 minutes. Remove from the oven and serve it warm. Enjoy.

Today is a day to celebrate women
around the world.

Exercise & Me



I must admit that I'm not a big fan of exercising,
in fact I don't look forward to it.
But in the other hand, I know how
important it is to exercise daily
and I'll be changing my habits soon.
After two consecutive pregnancies I need
to finally lose the baby weight for good.
I don't want just to lose the baby weight
or be really skinny,
I want to be fit, healthy and stronger.

Road to a better me:
No more junk food or sugary treats for me
but a well balanced diet. Plenty of water,
green tea and soy milk. I'll be keeping a
food journal as well, just to keep things in track.
Last year I bought the P90X program to
start exercising but soon afterwards I
discovered that I was pregnant with my
second child and had to stop. So,
I decided to start again. To keep
me motivated I joined the 90 day challenge group on Facebook.
On Monday I start my 90 day challenge and I'll be saying
goodbye to my love handles.

My new motto:
"IT'S NOT JUST EXERCISE, IT'S A LIFESTYLE"
