Shrimp with Onion and Bell Pepper

Ingredients:
1 pound shrimp (peeled and deveined)
1 white onion, diced
1/2 green bell pepper, diced
2 cloves garlic, minced
1 1/2 tablespoons olive oil
seafood seasoning
salt and pepper

Directions:
Season the shrimp with the seafood seasoning and set it aside. In a large skillet over high-medium heat, preheat the olive oil. Add the garlic, onion and bell pepper. Let it cook for 5 minutes, until the onions are transparent and the bell pepper is tender. Add the shrimp, let it cook until the shrimp is pink. Ajust the seasoning with salt and pepper if needed. Serve hot and enjoy.

Roasted Potatoes

Ingredients:
1 pound red potatoes (about 5 potatoes), peeled and chopped
1 tablespoon olive oil
1/4 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon dried parsley
salt and pepper

Directions:
Put the potatoes in a medium pot with cold water and a dash of salt, bring to a boil. Remove from the heat and drain really well. Put the potatoes in a baking sheet and drizzle with olive oil. Start adding the rest of the ingredients and toss the potatoes really well. Bake at 450 degrees pre-heated oven for about 15-20 minutes or until the potatoes are golden and tender. Serve and enjoy.

My Vacation

My vacation was fabulous and relaxing,
I had plenty of time by the pool and some sunshine!
We rented a beach house for a week and Virginia Beach
was everything that I hoped. It was great to take walks
in the morning by the ocean. I visited the Strawberry Festival,
 the Aquarium, Cape Henry Lighthouse and the Nauticus.
I also had the opportunity to see the boardwalk and had some
 great and fresh seafood! I love vacations, too bad they
don't last forever. Here are the pictures that my sister Carine took:
