Happy New Year!



2010 was a great year filled with great magical moments and I also have a lot to be grateful for. I spent most of 2010 being pregnant and waiting for the arrival of my first child, Sophia. I have to say that the experience of giving birth and motherhood are miracles. This year, I have learned that the things that matters the most are family, friends and love. As I started a family of my own, I have had a few "AHA moments" and realized that family will show you real love and support you beyond unreasonable measure, and I do mean beyond. During hard and difficult times your true friends will show themselves, these are hard to come by. And if you are lucky, these true friends will show and share with you a lifetime of friendship. What's more important than love? it's love. Love will show you that the things that matters most in life needs to be first felt in your heart. These are the sweet things I have learned and I hope that 2011 will be filled with more and be magical. Happy New Year, Happy 2011!

Cheesy Rice Fried Balls

One of my favorite thing to do is cooking. I love trying new recipes and making my own also. So, here's one of my very own recipe. Hope you enjoy. Happy cooking!

Cheesy Rice Fried Balls


Ingredients:
1 onion, finely chopped
2 cups cooked white rice
1 egg, beaten
½ cup grated white cheddar cheese
½ cup grated mozzarell cheese
½ cup grated parmesan cheese
3 tablespoons finely chopped basil leaves
Salt and freshly ground black pepper
2 cups seasoned bread crumbs
vegetable oil, for frying

Directions:
In a large bowl add the onion, rice, cheese, egg, and basil. Mix it until well combined. Season with salt and pepper. Roll the mixture into 2-inch balls and put on a baking sheet. Add the seasoned bread crumbs into a separate plate. Roll the balls through the bread crumbs. Gently add the balls into a deep hot frying pan and fry until golden and crisp, 3 to 4 minutes. Transfer the balls to a serving platter and serve.

In The Good Old Summertime


"In The Good Old Summertime" is a lavish and beautiful musical remake of "Shop Around the Corner" involving two feuding store employees played by Judy Garland and Van Johnson who are unknowingly involved in a romantic relationship as pen pals.


One of my favorite scenes is when Judy Garland plays the harp and sings the beautiful song "Meet Me Tonight in Dreamland". The other featuring songs include "Put Your Arms Around Me, Honey," "Wait 'Til the Sun Shines, Nellie," "Play That Barbershop Chord," "I Don't Care," and "Merry Christmas." It's a delightful musical romance.

Cookie Time: Peanut Butter Blossoms


Ingredients
1/2 cup sugar
1/2 cup brown sugar packed
1/2 cup butter softend
1/2 cup peanut butter
1 egg
1 teaspoon vanilla extract
1/4 teaspoon salt
1 teaspoon baking powder
1 3/4 cup flour 

Hershey's chocolate kisses


Directions
Preheat oven to 375 F
Mix together the Sugar, Brown Sugar, Butter, and Peanut Butter until fluffy.
Mix in the Egg, Salt, Vanilla and mix again thoroughly
Then mix in the flour and baking powder mix that thoroughly
Roll the dough into 1 inch balls roll through sugar and place on cookie sheet
Bake 8-10 minutes until golden brown

when finished baking pull out and immediately place a kiss in the center and let cookies cool and repeat until dough is gone.
